Pumpkin Spice Cookies

My son loves to help me bake in the kitchen, especially if it's a treat. I adore these cookies not only because they are healthy, but also because they are so incredibly easy and only have a few ingredients. He and I can throw these together in a flash, but we can eat them even faster. Hope they bring some smiles to your crisp autumn day.

Gluten-Free, Dairy-Free and Naturally Sweetened

Ingredients:

  • 1/2 cup dry roasted almonds or pecans
  • 1/2 cup  dry roasted sunflower seeds
  • 1/4 cup honey
  • 2 egg whites whisked
  • 1 tablespoon pumpkin spice
  • 1/2 tsp vanilla flavoring (optional)
- Grind nuts in processor until the texture becomes fine
- Mix in remaining ingredients
- On a greased cookie sheet place rounded "cookie dough" balls
- Place in oven at 350 for 15 minutes.

We think these taste even better the next day.
