Olive Oil Granola

I love this granola recipe! The best part is that my husband loves it too! It's healthy AND tastes great! You can eat it alone or mix it with yogurt, milk or other milk substitute. I make my own almond milk and it is delicious. It makes a great snack or meal. Feel free to add different dried fruit, ie: cherries or add flax seeds or sunflower seeds. Whatever you like! It is especially good warm right out of the oven. *(Tracy was given this recipe from her sister Miriam)

Ingredients:

  • 3 Cups Old-Fashioned Rolled Oats
  • 1 1/2 Cups Raw Hulled Pistachios
  • 1 Cup Raw Hulled Pumpkin Seeds
  • 1 Cup Sliced Almonds
  • 1 Cup Coconut Chips
  • 3/4 Cup Pure Maple Syrup
  • 1/2 Cup Extra Virgin Olive Oil
  • 1 Tsp. Sea Salt
  • 1/2 Tsp Cinnamon
  • 1/2 Tsp Cardamom
  • 1 Cup Dried Apricots
  • 1 Cup Dried Cranberries
  • 1 Cup Raisins

Preheat oven to 300 degrees. In a large bowl, combine oats, pistachios, pumpkin seeds, almonds, coconut chips, maple syrup, olive oil, salt, cinnamon, cardamom. Spread mixture on a rimmed baking sheet in an even layer and bake for 45 minutes, stirring every 10 minutes until golden brown and well toasted.

Transfer granola to a large bowl and add dried fruit, tossing to combine. Store in air tight glass container. Mason jars work great! Make about 9 cups.
