Cowgirl Caviar

My family recently took a mini vacation to the lake. While we were there my sister-in-law Dolores, made a delicious dip to share. We found endless ways to use this over the weekend. It was great on our salads, in burritos, on top of scrambled eggs, and with blue corn chips. Since we have returned home, I keep a stash of it ready to quickly spice up our meals. My husband loves it right out of the bowl.

Ingredients:
- 2 bunches cilantro - chopped
- 2 bunches green onions - chopped
- 5 cloves garlic - minced
- 6-7 roma tomatoes - chopped
- 4-5 avocados - chopped
- 1 can black-eyed peas - drained
- 1 can black beans - drained
- 1 can pinto beans - drained
- 1 can corn - drained
- 1/4 c. olive oil
- 1/4 c. apple cider vinegar
- 1/4 - 1/2 tsp. Tabasco (depending on preference)
- 1/2 tsp. garlic salt
- salt and pepper to taste
Mix all ingredients in a large bowl Enjoy!!!
