Blueberry Kefir Treat

Years ago I was suffering from chronic sinus problems. I went to a myriad of doctors, western MD's, allergists, ear, nose and throat specialists, and literally tried every vitamin/herbal concoction out there. I was told by the practitioners that I suffered from allergies and that I would need to be on medications forever. Feeling ill and emotionally exhausted, I succumbed to the allergy medications as well as their recommended rounds of antibiotics. Not only did these so called remedies not work, but I began feeling worse. Frustrated and physically depleted I was led by a friend to read a book called The Body Ecology Diet by Donna Gates. After reading the first few pages I knew in my heart that I had been given this book for a reason. This was different. These were the answers to unlocking my health struggles. At the beginning of the book Donna asks a number of questions to find out the severity of your health conditions, I scored high on the scale, and I knew I needed to give her way of eating a try. Amongst many things, she teaches about the importance of adding probiotics into your diet, and not through more capsules, but by way of delicious food and beverages. The book not only taught me what to eliminate from my lifestyle, but more importantly what things to eat in abundance, she emphasizes that this is not a weight loss program, but a way of life. Within 3 days of incorporating her lifestyle my symptoms were alleviated. Within 3 months my symptoms were eliminated. By 6 months I had regained my life back and was very excited to pass on the information to others. I'm happy to say years later that I incorporate many of her principles into my daily routine, and have had the privilege of helping friends and family. My child who is now almost 5 years old was given Donna's signature "kefir" as his first food beyond exclusively nursing. I am passionate about these foods and will forever be grateful to her influence on my families way of life. 
One of our favorite things for breakfast is Kefir with mixed berries and a few drops of stevia. Kefir is a fermented, enzyme-rich food filled with friendly micro-organisms that help create a healthy intestinal tract. Kefir is a complete protein, is loaded with B vitamins and valuable enzymes. The taste is similar to yogurt, however thinner in texture but more tart and refreshing. Although it is made from milk, the yeast and probiotics consume the majority of the lactose making it a friendly food for even the lactose intolerant. 

Directions:

One of our favorite treats is to have a bowl of kefir, 2 drops of stevia, then adding frozen blueberries with coconut oil on top. The coconut freezes to the bluberries and adds a little crunch to it. We consider this to be a magical food fast food! Give it a try and enjoy!
