Basil Infused Lemon Water

Today has been one of those perfect lazy weekend days. We slept in, made some coconut flour pancakes, built forts in the living room, and picked some things from the garden. My husband built a boxed garden for me this year and the veggies are doing so great and look quite healthy. Each evening we go out and see what's coming along, last evening we found some strawberries, a few tomatoes, and basil.....so fragrant and yummy. I was recently inspired while checking out this new juice shop, they were giving complimentary waters with lemon wedges and none other than .....BASIL! I thought at first I may not enjoy it, but it was soo yummy and refreshing. Today my son and I picked a handful of our basil, added some lemon to the water and wahlah! Give it a try, I think you'll be surprised!

Scientific studies have established that compounds in basil oil have potent antioxidant, antiviral, and antimicrobial properties. Aside from adding zing to so many foods it is traditionally used for treatment of stress, asthma, diabetes and acne.
In addition to being inspired by the basil water at the juice shop, I decided it was the perfect weekend to pull out our juicer and make some fresh drinks! The drink below is my son's favorite.
- 4 carrots
- 1 cup spinach
- 1/4 cucumber
- 1/4 lemon
- 3 kale leaves
- 1/2 pink lady apple
I love how it made a stripe across the middle. It's like vegetable art.
